    <summary type="html">&lt;div&gt;Has anyone here in our Tribe ever had the chance to try the Coffe derived from the Civet? (sp?)
&lt;br/&gt;
&lt;br/&gt;Ok!
&lt;br/&gt;For those who are not in the know about this particualr coffee?
&lt;br/&gt;The Civet is a small Cat-like Creature that feeds off the Coffee berries when they are Red (I think, if I am not mistaken that these creatures live in the South American Rain Forest) and digest them internally and then...???
&lt;br/&gt;Yes, you guessed it! Poop them out!
&lt;br/&gt;The Coffee Bean Farmers literally "Harvest" the digested Coffee Bean from the Animals poop! Of course they clean the beans and then grind them up and then make coffee out of them...slow roasted too I believe.
&lt;br/&gt;AND...it is incredibly, incredibly expensive too!!
&lt;br/&gt;
&lt;br/&gt;SO, my question is...
&lt;br/&gt;Has anyone ever tried it?
&lt;br/&gt;If not, would you give it a try if you had the chance and knew where it came from?&lt;/div&gt;

&lt;br/&gt;Even in the midst of the Civil War, there was still one thing the North and South shared -- a serious addiction to caffeine.
&lt;br/&gt;
&lt;br/&gt;
&lt;br/&gt;Confederate troops were less likely to get a cup of coffee.
&lt;br/&gt;
&lt;br/&gt; In that respect, the Union clearly had an advantage. Not only did the North have more than two-thirds of the population and control most of the heavy industry, railroads, and financial reserves in the country, it hoarded supplies of the highly addictive little bean, leaving the Confederacy to wage its own war against java deprivation.
&lt;br/&gt;
&lt;br/&gt;Coffee: It's what's for breakfast, lunch and dinner
&lt;br/&gt;
&lt;br/&gt;Throughout the Civil War, coffee was as prevalent on the battlefields as it is in offices today. In fact, the Union army was fueled by the stuff to the point that, if there was no time to boil water, the Boys in Blue would chew on whole beans as they marched. And at night, Union campsites were dotted with tiny fires, each boiling a pot of coffee like a million miniature Starbucks.
&lt;br/&gt;
&lt;br/&gt;Beyond caffeine cravings, Union troops loved their coffee because it was, literally, the best thing on the menu. 
&lt;br/&gt;
&lt;br/&gt;Before the advent of helpful (and tasty!) artificial preservatives, a marching soldier's rations were neither varied nor particularly appetizing. Typically, they consisted of salted meat, unleavened bread (accurately christened "hardtack"), and a little sugar and salt. 
&lt;br/&gt;
&lt;br/&gt;It didn't help that Union supply chains were riddled with corrupt food contractors who charged the government top dollar for rotten, stale, and insect-ridden foodstuffs. 
&lt;br/&gt;
&lt;br/&gt;Coffee, however, was almost always fresh because it was delivered in whole-bean form -- making it difficult for even the most dishonest supplier to skimp on quality. Not that they didn't try, of course. In fact, officials began requesting coffee as whole beans after some crooked contractors tried to up their per-pound profits by slipping sand and dirt into packages of ground coffee.
&lt;br/&gt;
&lt;br/&gt;In 1861, hoping to cut down on the time soldiers spent roasting and grinding beans, the army switched to a concentrated proto-instant coffee. The new concoction, called "essence of coffee," was made by boiling prepared coffee, milk, and sugar into a thick gloop, which soldiers then reconstituted by mixing it with water. 
&lt;br/&gt;
&lt;br/&gt;The product reportedly tasted every bit as bad as you'd imagine, and thanks to the corrupt dairymen who sold the army spoiled milk, it also tended to cause diarrhea. Needless to say, the Union army was soon back on the bean.
&lt;br/&gt;
&lt;br/&gt;Southern discomfort
&lt;br/&gt;
&lt;br/&gt;Noxious as essence of coffee was, Confederate soldiers would have gladly downed a cup or two. But, because of a Union naval blockade, coffee (along with weapons, machinery, medicine, and other vital materials) was in short supply in the South.
&lt;br/&gt;
&lt;br/&gt;Before the war, a pound of beans would have set you back around 20 cents in Yankee dough. Once pre-war stockpiles ran out, however, the same amount was running as high as $60 in Confederate money. (Despite the undervalued currency, that was still a lot.)
&lt;br/&gt;
&lt;br/&gt;There was some coffee that made it into the Confederacy -- usually carried by steam-powered blockade-runner ships.
&lt;br/&gt;
&lt;br/&gt;But, for the most part, Southerners had to rely on coffee substitutes, including various forms of roasted corn, rye, okra seeds, sweet potatoes, acorns, and peanuts. Unfortunately, all these imitations lacked potency, tasted awful, and upset the bowels. 
&lt;br/&gt;
&lt;br/&gt;The only slightly better alternative was tea made from the leaves of the native yaupon shrub. The good news was that it contained caffeine; the bad news was that it was incredibly difficult to digest. 
&lt;br/&gt;
&lt;br/&gt;Luckily, there was one surefire way for Southern folk to get their coffee -- by making peace with the Union. Soldiers on the front lines often called informal truces so Rebels could swap tobacco for Yankee coffee and then dash back to their camps before they were reported missing.&lt;/div&gt;

    <summary type="html">&lt;div&gt;   So I've just purchased an esspresso machine, good beans, and a good grinder. I followed all the instructions that came with the machine on how to brew good espresso. Still, for some unknown reason everytime I go through the actions with the damn thing I never get any good crema. Can anyone fill me in on the secret to getting to good stuff out of there. Im dyin here.  &lt;/div&gt;

    <summary type="html">&lt;div&gt;Hey, have others discovered Yeba Mate in this tribe? 
&lt;br/&gt;
&lt;br/&gt;When I got board of coffee I switch up to Yerba which I'm told is a healthier alternative to coffee... I notice that it does not give me that up and down feeling that coffee gives me... It's a more steady high :) 
&lt;br/&gt;
&lt;br/&gt;In any case I've found that after building up a caffeine/coffee tolerance its happy feeling to switch to Yerba... I love it iced in the summer..  Granted its taste will never be as good as coffee but I like it.

&lt;br/&gt;We've started a Yahoo Group for the purpose of gathering support and interest in an independent coffee house we plan to open in the northern suburbs of Metro-Detroit, Michigan. The group description is as follows:

&lt;br/&gt;"This group is for any and all individuals with the vision and desire to see a truly unique independent coffee house and rare/hard to find/used book-store open in eastern-central Oakland County."

&lt;br/&gt;Key differences between our coffee-house and many corporate chains will include, but are not limited to:

&lt;br/&gt;- custom blended teas/ herbal infusions
&lt;br/&gt;- nonproprietary techniques; we plan to hold classes in home-roasting and tea blending
&lt;br/&gt;- the inclusion of a rare/used book store
&lt;br/&gt;- regular open-mike poetry, local bands/musicians, and game
&lt;br/&gt;tournaments
&lt;br/&gt;- design and wall space given to local artisans; we hope to allow gallery space for special viewings of photo, print/painting, jewelry, and small sculpture; artists may chose to sell their work through our location

&lt;br/&gt;However, most of the time I just add a bit a silk soy milk and enjoy.  If I order a coffee drink most times it is just a soy latte.  I don't add sugar cause the soymilk is already a bit sweet.&lt;/div&gt;

&lt;br/&gt;We are looking for places where one can count on getting organic and/or fair trade brewed coffee ANY day of the week --not just randomly or on a rotating schedule with a dozen other varieties etc. Markets, cafes and coffee houses in this directory have made a point of spending more money to bring us a better brew &amp;amp; bring a little economic justice to coffee growers --often while charging less than the national chain outfits.

&lt;br/&gt;put in a big ol' glob of sweetened condensed milk
&lt;br/&gt;mix.  if you put it in a jar you can close the lid and shake.  the sweetened condensed milk needs a lot of mixing.

    <title>New coffee toy in my office.</title>

    <summary type="html">&lt;div&gt;I just picked up a hot water thingee from eBay.  It holds 3 liters of water, is stainless on the outside and teflon (eew) on the inside.  It looks sort of like a slightly oversized air pot.  You fill it with water, plug it in, and after boiling the water, keeps it hot.  I love espresso, but don't have the space for a decent machine.  Instead, in the office, I use a single cup coffee filter.  I use two scoops of fine ground dark roast for the first cup, and for each additional cup, add another scoop before brewing.  &lt;/div&gt;

    <title>The Starbucks Debate--My Thoughts</title>

    <summary type="html">&lt;div&gt;I too am very much against Starbucks, especially being from Vancouver where there is a Starbucks every ten meters on some blocks (no joke).  I must say that I agree with a lot that is written in this discussion group, but what really bothers me the MOST is how completely unoriginal and boring and plain depressing it is to see so many God Damned Starbucks in one city.  I hated private school because we all had to wear the same uniforms…no self-expression allowed. That’s what having this pretentious coffee shop every where reminds me of…some unoriginal corporate conservatives messed-up idea of making sure all shops look the same, serve the same stuff and hire the same employees (contrary to their claim of having a hiring practice that doesn’t discriminate, more on THAT later). Maybe I best not compare this coffee shop to staunchly stuffy uniforms (those at least have a small element of sex appeal, Starbucks is ANYTHING but sexy), A better comparison would be to clones.  Living in a city full of walking talking clones would be enough to want to hang myself (especially if they were clones of myself) so why would I want to walk a city where there are store duplicates after store duplicated and nothing else (that’s what a lot of cities are turning into).
&lt;br/&gt;
&lt;br/&gt;But to get to the part where I say something good about Starbucks (I know, I know it’s hard to believe our enemy has something redeemable about it) I’ll start by telling you that I used to work at Starbucks (please forgive me Lord) so I am speaking from experience.  I also used to work at Bean Around the World, Blenz and Torrefatzione Italia (which incidentally is now owned by Starbucks too).
&lt;br/&gt;
&lt;br/&gt;Out of all these coffee shops Starbucks is the only place that offered me full benefits as a part-time worker (less then 20 hours a week even) after a few months working there, and offered me stock options.  I also got a raise in pay regularly enough that working there for a long time was rewarded AND I could pick up hours working at any of the other Starbucks in the city anytime I wanted if I wasn’t getting enough shifts at my location.  In other words I was respected as an employee (partner they called us) and was rewarded for my hard work and was given more work if I needed it.  Starbucks also donated money to the organizations I was involved in if I submitted formal request or took part in that organization’s march or protest.  
&lt;br/&gt;
&lt;br/&gt;As a starving student in my late teens early twenties this kind of job was unheard of, as a matter of fact after I left Starbucks I couldn’t afford to get my teeth cleaned for a good two years (don’t look so grossed out, I still brushed!)  A lot of cool “grass roots” organic local coffee shops pay their employees next to nothing and don’t get enough regular customers to fill the tip jar. Another bonus to working at Starbucks—tips.  Because there are always so many customers (ones that tip well too) we got a tip pay out every off-week (the one where we didn’t get a pay check) and the tips were good, not like “food server” good, but good enough to buy my groceries or weekend of partying.  This was a lifesaver for me.
&lt;br/&gt;
&lt;br/&gt;The drawback to working there though was the “cult” like feeling of the work environment.  Or the “clickiness”, to be gentler.  Everyone has a certain “lingo” and style…it might be too rude or politically incorrect to say that they mostly hire gay guys, fat chicks and artsy-fartsy types but what the hell I’ll say that it mostly holds true.  There is nothing wrong with this practice per-say (In my opinion those are the coolest most “with-it” people I know) but it still is a form of discrimination to only hire certain types of people.  It goes back to the whole I don’t like clones point I made earlier.  I hate “clicks” and I hate groups of people who think that they are better and more knowledge then everyone else.  The majority of Starbucks employees think that they are more knowledgeable then you “oh lowly customer who knows nothing about coffee” are. There is always this super “I am so cool” vibe at Starbucks and the staff get that way because they are totally brainwashed in the training part of the hiring.  I know, I went through it first hand.  
&lt;br/&gt;
&lt;br/&gt;You go through this week of intense Starbucks classes that include coffee tasting; this is where you sit (and I am not joking here) swish coffee around on the palette of your tongue and spit it in a cup (like wine tasting) and describe to your fellow new hires what room of the house the taste reminds you of, or what colour you think of when you taste it.  This is also where you are told respectively by the managers that human beings cannot taste “bitter” that there is no such thing as “bitter” and anyone (customer) who says that the coffee is bitter is actually uninformed and wrong.  
&lt;br/&gt;
&lt;br/&gt;You are also told respectively that the coffee is not “burnt” and anyone who thinks it tastes like that doesn’t understand the roasting process of the beans and is also uneducated and not as informed as YOU are, because in other words-- “you are a partner at Starbucks therefore you are in fact smarter then the customer”.  
&lt;br/&gt;
&lt;br/&gt;Needless to say I got sick of being around pretentious know-it-alls who “take it in their corporate slave asses everyday by management, and “give-it” in the asses to every customer who has a different preference for coffee that may not be the All mighty Godly perfect cup of coffee “Starbucks Coffee”. I got in Doggy-Style position for the Starbucks routine brainwashing sessions myself when I worked there (hey we all get desperate for a pay check at some point).  The best of these sessions was the “Yayy frapacchino” hoop-la where all of us “Partners” got to miss a shift of work to celebrate Frappecchino beverages together with fun and games and “quickest drink maker” competitions. 
&lt;br/&gt;
&lt;br/&gt;We were made to wear Hawaiian flower chains and my store manager even put an inner tube on her head to fit in with the summer theme. This all sounds harmless, but trust me it’s not it’s just one of the many examples of Starbuck’s weird employee “bonding” and team building strategies all in the name of making a HUGE profit.  I mean huge! Each and every cup of coffee you buy is only worth 3 or 4 cents (they told us that too) and most drinks sell between 3 and 6 dollars there, so really paying your staff well is nothing to pat them on the backs too much for…but this day in age it’s really hard to find a job that pays more then minimum wage and gives you enough hours to survive on, especially coffee shops. 
&lt;br/&gt;
&lt;br/&gt; My long winded ranty-ness is just to say that Yes Starbucks Sucks, for all the reasons I listed and more…but there is intelligence behind their domination of the market, they do truly respect their employees (especially if you are a gay guy, fat chick, or artsy-fartsy type) and I would recommend working there over Blenz to young student types ANYDAY but that my friends is a story for another blog day. 
&lt;br/&gt;
&lt;br/&gt; Until then keep up the good anti-Starbucks work, but remember to be more understanding of the people that are working there too, just because they are arrogant and self-righteous preachy little coffee snobs who will resort to wearing inner-tubes on their heads all in the name of a product launching campaign doesn’t mean that they don’t have feelings or financial needs for survival too.Hey, I was there once, and I must say I have A LOT more respect for the Barista (at any coffee shop) then I did before I worked at one.&lt;/div&gt;

    <summary type="html">&lt;div&gt;Last night was rough.  Between the noisy neighbors and the helecopter and siren serenades, not much sleep was had here.
&lt;br/&gt;I get up to find OMG I'm out of beans!  The backup bag of grocery store grounds is long gone.  So I'm left with no choice.
&lt;br/&gt;I throw on some clothes and grab my keys.  Stagger to the car, am I safe to drive?  
&lt;br/&gt;Stumble into that S-place.  The pimply 20-something at the register gives me a knowing look.  Is my hair all stupid, I wonder.
&lt;br/&gt;Carefully drive back home.  Almost there.
&lt;br/&gt;Grind, grind.

    <summary type="html">&lt;div&gt;I'm just wondering if the rest of you heavy coffee drinkers worry about how much dioxin (a very common carcinogen) you ingest -- I am referring to the dioxin in bleached coffee filters, which I had never thought about until someone specifically pointed out to me that he does not drink coffee solely for that reason.  But if you're drinking a pot of coffee a day, over a period of several years it seems like that could add up.  It also seems bizarre and unnecessary that bleached filters are the industry standard...&lt;/div&gt;

    <summary type="html">&lt;div&gt;As a long time coffee-head, I wonder if anyone else never really took to the "Starbucks" dark roast trend? To me it's just a variation of French roast, which I never liked (even in France!). I'm a fuss-budget with my scotch and cigars, but with coffee I am ashamed to admit I like the classics better: Chock Full of Nuts, Maxwell Classic, Folgers Columbian (comes in whole bean too).

    <summary type="html">&lt;div&gt;The triple tall vanilla lattes every morning are expensive and I'm trying to save up for a big, long trip to Mexico (scuba, surfing, sun...). But I can barely get it together in the morning to make drip coffee, much less my own espresso, and I don't really like the flavor of either (cheap espresso machine coffee is the worst!). Has anybody tried those single serve coffee makers like Senseo, etc.? Thoughts? Opinions? Something I haven't tried... Thanks! &lt;/div&gt;

    <summary type="html">&lt;div&gt;After drinking a cup of coffee I will start have small trouble breathing (nothing serious) and sometimes it will get very hard for me to swallow food.

&lt;br/&gt;However... When drinking soda or taking a caffeine pill this doesnt happen at all, and once I ever tried cooling the coffee (i mean ice cold) and it sitll happened.&lt;/div&gt;

    <summary type="html">&lt;div&gt;I know Im a junkie, been doin the hot black since I lied about my age at 15 to work in an Austin coffehouse.
&lt;br/&gt;But if I drink cappuchinos and lattes all year, I would be a fat sack! With bathing suit weather and clothing optional freek festivals coming up soon, I gots to lose inches!
&lt;br/&gt;What Ive been doing 3 years now, is starting in March I only allow myself one cuppa joe (Ethiopian Harrar this week), and then hit the green tea all nite! 
&lt;br/&gt;I got to the chinese markets in my town and get referrals from green-friendly buds about the best. One brand at Diho Market is made from just the tips of the tea-buds, is flavored with lemon and fortified with ginseng. I don't know if ginseng does anything for me, but this tea jacks me up when I need it, the graveyard shift at the ER!!
&lt;br/&gt;I read it has half the caffine, but less than a third the calories and fat of plain black coffee. There's also reports of antioxident and anti-cancer effects, but Ive nothing to back that with.
&lt;br/&gt;However, there's something about it that controls my appetite! I eat less food, crave less sugar and fat, and consume less coffee, all three save me money. Plus there's the added bonus of my wife getting off my back about too much coffee and my vascular health for 3 months a year!
&lt;br/&gt;Hey, Id rather fight than quit, so I'll cut down, keep tweaked with my little green friend, and look like a sex machine for summer.

    <summary type="html">&lt;div&gt;So i would like some feedback on what you look for in a local independant coffee shop?   My friends and i are opening a cafe in Portland OR.  our storefront is off the main street, so we just need to kick some serious ass to draw in and keep our devotees of the brew.  
&lt;br/&gt;i ran a cafe for three years before i moved to this city, so i have some decent experience in the buisness, we are planning to open in a few weeks and have most everything looking good, 28 foot long custom bar, new equipment, renovated interior space, piston/lever two group espresso machine, etc.   we are going for a celtic/euro/independant theme. we still need to set our bakery menu, and food menu.
&lt;br/&gt;if you have any hints, tips, comments, or ideas they would be appriciated and used!&lt;/div&gt;

    <summary type="html">&lt;div&gt;I just brewed up a cup of the Bella Donovan blend from Blue Bottle Coffee (http://www.bluebottlecoffee.net), and I have to say, I am HOOKED. This stuff is amazing. Kinda deep and chocolatey. The site says it's a blend of Ethiopian and Sumatran beans... which probably explains why I love it, since I usually go for the Sumatran when I'm at Peet's. 
&lt;br/&gt;
&lt;br/&gt;Anyone else try this stuff? I bought a pound at the Ferry Plaza Farmer's Market here in SF over the weekend. &lt;/div&gt;
